Deep red colour, ripe dark fruits on the nose - blackcurrant, a little blackberry from Cabernet Sauvignon and some floral overtones from Cabernet Franc.
Full-bodied palate with concentrated flavour and plenty of weight. Blackcurrant, blackberry, cedar notes from French oak and a long dark chocolate finish.

Sarsfield Estate Vineyard is located in the Lakes and Wilderness area of East Gippsland, Victoria.
All grapes used are exclusively estate-grown.

vintage

A cool, wet spring was followed by a cool, ideal summer. With perfect cropping levels and grapes
developing with balance and style we really
expected one of these perfect vintages we only get every few years.
But heavy rain started a week before vintage and hardly stopped for three weeks.
The damage was done. and the grapes deteriorated very quickly. Picking was slow and tedious, and we lost a fair amount of the Shiraz and Cabernets to Botrytis.
Overall the quality of the 2012 vintage was very good but the meagre yields were disappointing.

winemaking

The 2012 Sarsfield Estate Cabernets Shiraz Merlot is a single vineyard blend of Cabernet Sauvignon and Cabernet Franc (~60%), Shiraz (~30%), Merlot (~10%) and a small amount of Mourvèdre.
Grapes were fermented in open vats and pressed in a basket press. The wine has been matured for 18 months in French oak barrels.
Alcohol: 13.3%, Titr. Acidity: 6.5 g/L, pH 3.52.
